Tacos, burritos, and enchiladas may have originated in Mexico and Latin America, but they have been welcomed and adapted by cooks all over the world.

oooh.... I've been having Mexican cravings for a couple of weeks and have yet to make anything. This might just be enough to get me to get it together enough to make something. I am drooooling looking over this list!!
Great roundup! My favorite vegetarian combo is portabellas, peppers and onions. (Recipe here.) The avocado crema is good on just about everything (a spoon included)!
I'll make anything into a taco! Tonight I'm making tacos filled with spicy lentil hummus, feta, lettuce, red onion, and tomato.
My favorites are my healthy fiesta fish tacos and my less healthy slow roasted pork tacos. I'm not a huge burrito fan but I love tacos, pretty much any kind!
For me, a good old fashioned Tex-Mex taco can really hit the spot. Beef fajitas are also really good and simple to make at home. If I eat out, cheese enchiladas with chile gravy are my weakness.
I made a Korean torta last night and it was so delish. I split a Mexican bollilo roll in half, toasted it, and then filled it with homemade bulgogi, Asian slaw, and mayo mixed with Sriracha.

I still make tacos with old fashion ground beef and hard taco shells! Not sophisticated but still very satisfying!
I made the beans and corn tostadas last night. We loved the cilantro dressing. I substituted my husband's homemade sour cream for the yogurt. It also helped use the corn and cilantro that came in our produce box this week! We eat "tacos" at least twice a week to use up leftovers.
I adore Mexican food but it's not common in the UK, especially the north where I live, and I'm certain that I've never had really good or authentic Mexican food. That said, I went to try a burrito bar that opened up in the city today and it was amazing - sweet pulled pork, spicy beans, soft tortillas... I make burritos, enchiladas, tacos, fajitas, tostadas and huevos rancheros at home and they're all a wonderful excuse to eat lots of fresh veg with a squeeze of lime and some yogurt.
I think our most frequently-eaten meal is a plain rice, bean and cheese burrito with chopped tomatoes and yogurt. Hits the spot every time.
