Bride's Cake/Zebra Cake. My Granny (from Scotland) makes it with thin chocolate cookies and unsweetened whipping cream. Add a few spoonful of mascarpone to stabilize the cream, layer on a pretty dish, cover and chill overnight. It's really easy and delicious. You can also make individual portions. I have to do that, otherwise the temptation to eat the whole thing is just too much!

I make a super light chocolate mousse that makes for a great summer dessert, especially topped with whipped cream and berries. Sometimes I freeze the mousse--it comes out a bit like an Italian Semi-Freddo.
Speaking of cream and berries, that's a pretty solid no-cook dessert!

An ersatz, but surprisingly tasty key lime pie. Lower fat cream cheese works fine here and regular (Persian) limes are preferable to the bottled juice called for in the recipe.

YUM. Fresh strawberries, sour cream and brown sugar, and grilled pineapple, are two of my favorite desserts of all time.
BTW, that Strawberry Milkshake they linked to above is very, very good. It was a little too thick for me, so I added half a cup of orange juice. Also, I added an egg for fluffiness, a dash of vanilla for a background note, and some blackberries because they were layin' around doing nothing. Delicious!

Made the strawberry whipped cream icebox cake for my son's 2nd birthday and it was a super hit!
I made the Strawberry one...it was fantastic, and easy!
My family is in love with two different (super easy!) icebox pies, both of which are poured into graham cracker crusts (store-bought or homemade) and chilled in the freezer til set.
Key Lime: 1 tub cool whip, 1 can sweetened condensed milk, and lime juice.
Chocolate: 1 tub cool whip and 1 (large) melted Hershey's Symphony bar.
Not having lime juice, this week I made the first recipe but added a creamy stout beer. Frozen beer pie. Does it get any better?
With a dairy and soy allergy, dessert is often a challenge. However, I made Rick Bayless's Avocado Ice Cream and it is AMAZING. It's like a frozen, creamy margarita. Totally not what I expected taste-wise, and that's a good thing. It's super easy too (I adjusted a bit for taste):
2 cups avocado puree (I used 4 whole avocados minus a few brown bits)
3/4 cups water
1 1/2 cups sugar
1/4 cup lime juice
1/3 cup tequila
Mix all in food processor or blender. refrigerate for at least one hour. Pour into ice cream maker and let it do its magic. Ta da!
