When I think of summer one of the first things that come to mind are lemons. The staple citrus can be used in so many different ways and no matter what the outcome it's always refreshing. It's always a plus that you don't need to turn your oven on for most of these!

those lemon burst cookies looks a-mazing until i read the ingredients and found out that they're pretty much made of lemon cake mix, cool whip, and icing sugar. come on!
@likethunder I felt the exact same way. I'm not one to use prepackaged anything, ever. :( Oh well, better luck next time. The tart looks good though. :)
Don't knock 'em til you've tried 'em! I was first introduced to that recipe as a chocolate cookie, and I registered for this site just to tell the two of you that I get rave reviews every time I make them, no matter what the occasion!!!

Here's the problem with the lemon cookies from my POV - they don't actually use lemons!
I've got a Meyer that is outrageously prolific when the season is in. I do freeze a lot of juice but I'm always on the lookout for something involving lemon juice that's fairly easy to make. It's so frustrating to find lemon-something recipes only to find out they really have no lemon in them at all!
I have no problem with box mixes. Just give me a recipe that lets me use my Meyers and have the true flavor shine thru.

Those lemon macaroons look amazing! I tend to use lemon in savory dishes more than desserts in the summer, my favorites are in risotto (http://meatballsandmilkshakes.wordpress.com/2011/07/25/risotto-with-spinach-lemon-and-bay-scallops/) or with raw fish as a crudo (http://meatballsandmilkshakes.wordpress.com/2011/06/29/scallop-crudo-with-citrus-and-sea-salt/). I'll have to give some of these a try though!
