Have you ever made an Easter pie? It's a traditional Italian dish made with a ricotta egg filling that can be flavored with sweet or savory ingredients and served either as an appetizer or a dessert. Either way, it's a rich treat to celebrate the end of the Lenten fast.
Some recipes call for a homemade crust while others make use of pre-made phyllo dough. The ricotta egg filling can be made savory with various sausages and vegetables, or sweet with ingredients like orange zest, vanilla and pine nuts. The savory version is often served as an appetizer before the Easter meal.
Here are a few Easter pie recipes to try:

I'm attempting to make my first savory italian easter pie this sunday with my husband's grandmother's recipe. She hadn't made it in years and recently passed away so we're making it in her honor. Everyone in his family is very excited about it so I hope it turns out well! There are 6 lbs. of cheese (ricotta, mozzarella and "basket cheese") along with 4 1/2 lbs of meat (sweet italian sausage and proscuitto) and 6 hard-boiled eggs, so this is one big pie! Cross your fingers for me. :)
It turned out pretty well! Photos here: http://www.flickr.com/photos/traceychrisandbea/sets/72157623771530508/
