I live in the Midwest, in the heart of sweet corn country. The fields are full of plump ears of sweet corn right now, and there are piles of golden tassels and green husks at the farmers markets every weekend. Earlier today we asked you about your favorite way to get all the silk off an ear of corn. Now we're turning to even more pressing matters: Eating lots and lots of that sweet, juicy, crisp summer corn. Here are 10 ways to enjoy it.
My own personal favorite way to eat corn right now is probably in a corn and tomato salad. What about you? Do you prefer it straight up, on the cob, and held fast by a couple of these little gadgets? Or do you prefer something fancier?
None of these recipes are terribly fancy, but they do show off that sweet corn flavor in some different ways. From roasted elote to fresh cornbread, and from scallops with corn salsa to a simple salad, these are some of our collective favorites.

Oh I love fresh corn, just boiled with butter and sea salt. My parents (who live in Corn Country) are eating it with cream cheese instead of butter. I had never seen that before, and didn't really like it, anyone else ever eat corn on the cob with cream cheese?
Fresh corn is so tasty. It is delicious on homemade pizza as well.
Boiled and eaten straight up, no butter. It's perfect on its own.
I do like to make esquite, too, which is like elote cut off the cob.
msmezzo, I've never done it directly on the cob, but I make a potluck dish that consists of corn kernels, cream cheese, and jalapenos that is baked in the oven. Kinda like creamed corn...always goes over well.

I've made this corn pudding recipe from Food & Wine several times. You just grate the corn and bake it and it comes out amazing. Super simple and delicious:

I love serving sweet corn with an herb-butter dressing. I chop up some sage, cilantro (and any other herb I have on hand), melt down some unsalted butter and mix in the herbs. I take the corn off of the cob, and brown it in a pan, then mix it with the dressing and let it come to room temp. So simple, yet such a crowd please (the one down side is it doesn't make the best leftovers).
Bacon-corn salad with buttermilk dressing served in fresh tomatoes.
