We've baked in both gas and electric ovens, and we may be imagining it, but we feel like there can be major differences between the two types. What do you think? Do you have a gas or an electric oven?
Maybe we've just used older gas ovens, but we've had a hard time getting gas ovens up to the temperature we want; they seem to run cooler. All of our electric ovens, on the other hand, have run hot.
What about you? Do you have a preference when it comes to gas vs. electric ovens?

I have found the same true about gas vs. electric. Gas seems to be cooler and stuff is very hard to get browned correctly. The gas ovens I have had didn't seem to cook evenly.
My electric ones have run hot but definitely cook more even. But I do like gas stoves better than electric ones.
I prefer electric to gas 95% of the time because that means I don't have to pay a gas bill and I can use the clean cycle to clean it fairly effectively.
The other 5% of the time, the power's out.
My gas oven runs hot, depending on the temp it is around 25 to 50 degrees over. Same with my parents, also over temp not under. This is more about calibration than anything. That being said---an ideal combo would be electric oven with gas stove----I really like the idea that a broiler can be on the top side of the stove so its not just going to char things to ash. You can actually adjust the spacing.
I have a gas stove- the one our house came with was bad...The oven burner was going, and then died on Christmas eve (of all nights right?? To be making Christmas dinner...)
We bought a new one and my grandfather scrapped the old one (We have metal recycling in our town).
I LOVE my new 5 burner gas stove top/oven. It cooks evenly, the broiler is a dream come true, and I really can't say enough good things about it! Not to mention, natural gas is acuutally greener than an electric stove/oven. It's a winner in my book!!
I hate my electric oven and miss having a gas one. Where I come from gas is the norm but in the state where I live now hardly anyone has gas powered appliances. My oven is terrible and cooks unevenly but to be fair I don't know if that is because it's electric or just poor quality in general. All I know is that 5/10 times I bake something it will come out burnt on the inside and soupy in the middle even when baked at the correct temperature and amount of time. I miss being able to actually broil food also. The broil function on my electric oven is a joke.

@Wendy, you could try using firebrick to line the bottom and just letting it preheat forever. The extra thermal loading is supposed to help but it's not something I've ever tried.
I have had both gas and electric ovens and I like electric better. It doesn't heat the house up as much and I always thought it cooked more evenly but now I think it was just a preheating issue or maybe a calibration one. Preheating an oven thermometer has pretty much cleared up any problems I had.

I've found it the other way around, I think electric takes longer to warm up, especially on the hob. I don't really mind whether the oven is gas or electric but I'd hate to have an electric hob and I grew up with one so it's not like I'm not used to them.
really miss having a gas range and a gas stove. then i know when its on or off. and i feel it cooks so much better. someday, when i have my own home perhaps...
My electric oven runs hot, I put in an oven thermometer and tried for a while to adjust the oven setting to the thermometer to get the right temp, this NEVER worked out. I decided that the oven runs hot, but not at a constant temp.
I don't know a lot about how ovens work, but I don't think they maintain a specific level of heat/power. They seem to heat up, hit a temp, and then stop until the temp drops. Is this right?
I grew up in a house with a gas range and double electric ovens- and I must say that *that* is my preferred configuration. But I have no choice out here in the boonies of Seattle, where there are no gas lines in my neighborhood anyway. I'd have to get 20 of my neighbors to sign up for service before they'd come out here anyway. Sigh.
Electric oven- with convection, which I adore. Heats up fast and is accurate!
I've only ever used electric, and my current oven runs 150 degrees hot! ONE HUNDRED FIFTY!!! I burned more than one batch of cookies before I finally bought a thermometer... best investment ever.
Some gas ovens can have issues with browning because of the moisture created during combustion. A little extra moisture in the oven can be good when cooking certain things like braising meats and bad in some others, roasting a chicken. I prefer electric and when you are buying a range electric is usually more expensive (duel fuel or gas top/electric oven that is).
I find the opposite ... but then I'm primarily baking bread. You just can't beat the radiating heat of a gas oven for making perfect crust!
I've got electric, and the oven's just fine (maybe a tiny bit cold - or that could be the uselessly vague temperature dial), but I really wish I had a gas hob. So quick!
My gas oven runs 10-20F cold, which is not too bad. I just crank it up one extra notch on the dial. I wouldn't mind an electric oven (esp a convection oven) but it is not worth sacrificing the gas stovetop! Perhaps in a few decades I'll be able to get one of those snazzy electric oven/gas stove combo deals, but in the meantime I'll stick with gas.
I have an electric oven that's pretty accurate, compared to the last one that ran 50 degrees hot. In my opinion, you can't beat an electric oven for bread baking -- the temperature is more constant than gas and the oven cavity is better insulated, which makes steaming easier. My dream kitchen would have an induction cooktop and an electric oven.
I love my gas oven. It heats up very quickly and does a nice job on everything from roasts to baked goods. I haven't found moisture in the oven to be a noticeable problem.
Gas stove is a lot easier to cook with than electric because it's a lot easier to modify the heat I've found.
I have an electric oven but a gas cook top. I thought it was weird when we first bought the house but have come to love it!
Now if I could just get that poorly designed thermostat to stop overheating when I run the self clean. We've replaced two already so now it's oven cleaning by hand only. :(
Electric all the way, because it will never suffocate me if it develops a leak.
I prefer electric. My past Electric oven preheats easy faster than the gas one I have now. It could be due to the calibration, but our gas stove runs way too hot. Even on the smallest burner on the absolute lowest setting, everything boils and burns. Theres no such thing as simmer. We're constantly turning the eye off to let food cool.
electric oven and gas top... as it's normal in Italy: gas oven seem to be really out of fashion here. I have met in person just one quite old gas oven and it was a bit intimidating, still I was able to work with it.
The only way for me is gas cooktop with electric oven. I love the control gas affords me on the cooktop, and the even-ness the electric provides in the oven. Simple as that.
I had an electric oven at my previous apartment that produced perfectly browned baked goods, ever since moving to my current apartment with a gas oven, things just aren't the same and I feel like the temperature fluctuates more frequently.
Gas is cooler?
...well, maybe in home ovens, I guess, but mine is electric, and the only time I ever find myself cooking in gas ovens is scout campsite kitchens, and the big catering ovens they often have. And ye gods - first you have the drama of getting the thing lit - because of course, the electric sparker bit is never in good enough repair to work, and the back of the oven is over an arm's length away - I've ended up with matches taped to the end of a knife, taped to another knife, so that I can light the oven. (Then you have to stand there forever and a day holding the boost in until it decides it's going to stay lit, but that's another story).
...oops, sidetracked. Anyway, the last one I used apparently had one temperature - "hot enough to burn pizza."
I love my gas - but in years past I had a very hard time using gas when having experience cooking with electric - these days - I guess with more higher end gas equipment - I burn less, cook faster and really enjoy making bigger meals
two years ago i bought a house with a gas stove after a lifetime of electric units.
i love it and will not go back!
When I remodeled our kitchen, I kept our fairly new electric oven and also bought a gas stove. I like to use the electric for baking and the gas oven for meats. I love the gas burners - more heat control and easier to keep clean.
My husband and I have argued gas vs electric. I kept saying the gas heats faster. We tested the two and the electric oven reached its baking temp several minutes before the gas oven did. Then, maybe the brand has more to do with preheating time. . . .
I used to have a gas stove at my old apartment and the oven always ran really hot, but when I bought my house I got a new gas stove and it's perfect. I absolutely love it! Plus, when the power goes out, I can still heat things on the stove! Believe me, I've totally tested this. :-)
