If you're having a crowd over for the Superbowl, you might be looking for a low-maintenance, easy idea for food. Here's one idea we've used before with success:
Host a baked potato party! You provide the potatoes (plan on two per person). Simply wash, dry, and bake them all in your oven at once at 400 degrees for about an hour. No need for foil. Guests can bring toppings, which can range in cost and ease of preparation from a tub of sour cream to a crock pot of chili.
Chances are you'll end up with a huge range of toppings and some really yummy and warming potatoes. We just hosted a party like this for a white elephant gift exchange and it was a simple way to entertain after the decadent holidays.

Martha Concrete Lam...

Good idea. I love baked potatoes with lots of stuff on them.
Definitely doing this, only the party is not at my house and we'll only have laps to eat on (unmarried male room mate house) so I think I'll bring a big pot of mashed potatoes and a bunch of toppings, and disposable bowls. Topping suggestions? There's the obvious cheese, chives, sour cream but what else?
@mimee: BACON. Boys like bacon and other meat products. Can't get away from it at my house. Chili works too.
Yessss! I've been planning a burger/spud bar for Sunday. Cannot wait.
@keltrue - Do you realize how stereotypical you sound in your post? I hope you do not also have stereotypical ideas about what women like too. I like bacon and I'm a woman. Also, there are male vegetarians and even vegans out there. I hope that you didn't mean what you implied, but gendered statements never lead anywhere good...consider it a heads up for next time.
@mimee25 chili, taco meat, salsa, shredded chicken
@mimee, how about good old fashioned gravy? Or for a healthier alternative, sauteed veggies.
I used to like steamed broccoli and cheddar cheese (or cheddar "cheese" sauce for those who can stomach it) on a baked potato.
@mimee - The other night I made mashed potatoes topped with bacon, shredded cheddar, and green onion...oh, it was delicious! So unhealthy yet so great. Perfect comfort and/or football food!
@Rachiti - Boys do like bacon. Take a deep breath. It's gonna be ok. :)
grated parmesan cheese, coarse ground black pepper, sea salt
I actually did this for a super bowl party a few years ago and everyone loved it! I can't remember all the toppings I had but I went a little crazy. I know there was a cheese sauce, some chili, some veggies like broccoli, sauteed mushrooms, and of course sour cream, butter, bacon bits, etc. It was great since I had a whole host of very picky eaters--everyone could get exactly what they wanted. Also very easy to do, since the potatoes stayed warm in a covered heavy pot for a long time, and most of the toppings were prepped in advance. I served it with a cole slaw on the side, and cookies for a sweet bite. Perfect
We did this last year and everyone loved it. One guy ate five or six large potatoes, in addition to wings, nachos, brownies, brats etc. Crazy.
