These patties are quite easy to make, and they travel well. Serve with a dollop of spicy homemade mayonnaise (as I did) or top with avocado, salsa, or a drizzle of olive oil and sea salt.

Just made something else with quinoa and kale on Monday... wish I had this recipe!
Also, it's NOT gluten-free!!!! I was suspicious when I saw the word "patties", as that usually involves breadcrumbs.... and it does. But, you could definitely substitute something else (GF breadcrumbs, etc), or maybe they would hold together with the eggs anyways. Just wanted to warn people. :)

Thanks for the notes about the gluten-free issue. As a Celiac myself, my kitchen is completely gluten-free.
I assumed anyone who was gluten-free would add the safe croutons of their choice. But I just updated my recipe to note using GF croutons to make things absolutely clear.
I make my own croutons from gluten-free sandwich bread - it's so easy and usually tastier and less expensive than the store bought variety.

I meant to say, I make "breadcrumbs" from gluten-free sandwich bread. I must have croutons on the brain today! And I do make both of these items myself from the butt ends of sandwich bread.
For my gluten-free friends that are new to making your own breadcrumbs, here's how you do it. Toast up a few slices of bread (or those lonely end-pieces) until they are dry. Tear the toasted bread up into chunks, toss them in the blender. Pulse a few times and you've got homemade bread crumbs. So easy... and I love to put scraps to good use!

Wow, these looks soo good, I also had in mind to make some quinoa patties, I thought to use broccoli but tale sounds very good too, topped with avocado.. mmmm. can't wait to try.
