I don't have a lot of spare time every day to spend in the kitchen, so instead I spend a good portion of my Sunday prepping breakfasts, lunches and dinners that are easy to grab when I'm on the go, or reheat for dinner.

Fantastic post!
The quinoa-avocado salad looks tasty but since when does anything with avocado last a week? It usually turns brown and slimy in a couple of hours.
I thought the same thing about the avocado...maybe there's some citrus in there that helps? But still- I'm skeptical.
Avocado is greatly helped by red onion as well as citrus. Dice one up finely in the mix and you should be set!
If my husband didnt eat so much, maybe this would last a week, i swear he can eat most of a roast in one sitting...
@ARCAYDIA my thoughts exactly!!! i started ordering sunday pizzas with half toppings my live-in-boyfriend won't eat so i'll have some leftovers to myself later in the week.
that barbacoa beef is the bomb.. so easy and it last (just a few days) in our house, it's that good!
I just love making up these perfect size jars and seeing them in the refrig. I cut up fresh strawberries, added a very small amount of sugar and orange zest before putting them together with greek yogurt. Perfect for those morning when I am in a huge rush.
LEM326 - that's so funny! AND a great idea! That's not my problem but I have noticed that the right toppings can make anyone an insatiable pizza consumer - even when they're not normally big eaters!
