A cheesy, bubbling lasagna isn't exactly fare for a hot summer day, but there's no reason to take this comfort food off the menu completely! Just keep it light and fresh with a free-form version that doesn't require heating up the kitchen and everyone around.
By omitting the heavy sauce and melty cheese, a no-bake summertime lasagna is the perfect way to show off the season's fresh produce like tomatoes, basil, and squash. Layer ricotta cheese between the noodles and vegetables for a light creaminess, or keep it vegan. You can even leave out the noodles for a gluten-free, raw version. Summer lasagna may not be "authentic," but it's certainly delicious. Here are a few casual, colorful recipes to inspire:

I've never thought of not baking lasagna but really, once the noodles are cooked you can do so many things with them. What a great idea!

This is a great way to use up those 3 or 4 leftover noodles from past batches of lasagna, too. I always seem to have a few extra noodles hanging around.
now if there was a way to cook those noodles without heating up the kitchen with a big pot of boiling water....
That looks so good it is killing me! I want some, NOW!!!
Also: smear noodles with pesto, roll up, top with marinara. Mmmm.
~lynnebee - Buy the no-cook noodles. Lay them in a dish and pour in some warm water, just enough to cover. They will soften just perfectly. (Warm the water in the microwave, or run some water through an empty coffee maker!)
