And here I was just telling a friend of mine about a dish my mom made a lot when I was growing up. Acorn squash halves filled with cut up apples and nuts, a pat of butter and into the oven to roast... then drizzled with a little maple syrup.
I imagine many different kinds of fruits (dried and raw) could work here.
I saw a recipe for roasted sweet potatoes stuffed with roasted Brussels sprouts, cranberries, pecans, and crumbled cheese that looked delicious. These recipes really seem like something to make for tonight with it being so blisteringly cold outside!

I don't always love stuffed veg, because nothing gets as crispy as I like - neither the stuffed veg or the stuffing. I've got a couple of suggestions coming in from left-field, though. One is vegetarian haggis!! It's so lovely! It's oats and nuts and french lentils and kidney beans and roasted mushrooms with sage, nutmeg, whiskey... ANd I cook it inside of chard leaves instead of an animal's stomach.

ANd tomatoes stuffed with semolina dumpling batter and cooked till soft and comforting, with a sauce made from the insides of the tomato, chard and pinenuts.
I usually stuff medium sized onions,swiss chard leaves,grape leaves,small sweet peppers ,white cabbages with a mix of ground beef,rice,chopped herbs,spices,olive oil ,and tomato sauce cooked all in one pot ,I arrange them in layers and cover with water(has some lemon juice,tomato sauce,spices and salt ) when done just place a tray or a large dish on top of the pot and flip pot upside down.
other dish is stuffing small asian eggplants with a mix of chopped tomatoes,chopped parsely,ground beef ,then cook in a stew .
Also I do stuffed cabbages (with ground turkey and herbs) and cook in a pomegranate molasses the sweet sour one .
