From the Kitchen... On How to Honor Ugly Tomatoes

The tomatoes coming out the garden, and those available at Farmers' Markets around the city right now, are the season's last. They're full of flavor. They're striped, knobbed, and gnarled; beautifully so. When one comes across vegetables like this, the last thing you want to do is cook them. Enjoy their beauty as is, just let them be. Over-cooking, saucing, dressing, and even garnishing ripe, seasonal vegetables is like over-dressing a beautiful woman, there's no need. The best treatment is a drizzle of olive oil, and a dash of high-quality sea salt and a faint peppering. Don't over-do it. Just give her a quick swipe of lip-gloss, and send her on her way.
