With all the spicy Latin recipes last week followed by all the egg recipes this week, is it any wonder that I've woken up every morning with an intense craving for huevos rancheros? I'm going to need a fix of sunny fried eggs smothered in chunky salsa pronto. Have a favorite version to recommend?
I have a habit of going over the top with otherwise simple dishes like this. At it's most basic, huevos rancheros are fried eggs served with soft corn tortillas and a generous portion of fresh salsa.
To this simple fare, I like to add things like cumin-spiced black beans, slices of creamy avocado, a sprinkling of cotija cheese (or melted monterey jack!), and in the summer, fresh corn straight from the cob. This is the kind of meal that will last you all the way to dinner!

Huevos rancheros is my all-around favorite breakfast/brunch food. I especially like it served with home fries.

I hosted my bookclub brunch with huveos rancheros in tortilla cups plus a pitcher of watermelon aqua fresca; it was fantastic. I found the baking time was WAY off from the original recipe from Bon Appetit, so I was glad I tested it the day before.

Eggs in Hell (modified Huevos Rancheros)
–from Nuevo Tex-Mex: Festive Recipes from Just North of the Border by David Garrido and Robb Walsh
Ingredients
3 large fresh tomatoes, chopped
2 tbs extra virgin olive oil
2 jalapeno chilies
1/2 onion, chopped
1/2 green bell pepper, seeded and chopped
salt
4 eggs
4 corn tortillas, warmed
Directions
Puree the tomatoes in a blender; set aside. In a large skillet, heat the olive oil over medium heat. Add the jalapeno, onion, and bell pepper and saute for 4 minutes, or until wilted. Add the tomato puree and bring to a boil. The sauce should be quite runny. If it is too solid, add a little water. Season to taste with salt. Stir the sauce well and then gently break the eggs into the pan. Cover and allow to cook over medium heat for 4 minutes, or until the egg whites are well set but the yolks are still soft, or to desired doneness. To serve, put 2 tortillas on each plate. Gently life the eggs out of the pan and place one on each tortilla. Spoon the sauce around the eggs. Serve at once.

I heat up some corn tortillas in a pan with oil, then crack some eggs on top. Pour over a bunch of salsa verde, add some cheese, and cover. The eggs steam, and then you scoop it out and top it off with avocado, cilantro, and black beans.
