I've tried that recipe before, and just FYI, the cashews puree to a much smoother consistency if they are soaked overnight in the water first.
Also, try it with cayenne pepper instead of black for a little extra kick!
Hmmm...I don't see myself making this one.
Like Stiletto, I made this recipe over the summer when corn was at its peak. It was very good and quite refreshing on a hot day. I saved the recipe to prepare again as it got thumbs up all around.
Very pretty soup.
