Soup of the Day: Italian Sausage and Pasta

When we think of Soup, with a capital S, this is the kind of soup that Soup should be.

It's chock-full of interesting things -- sausage, pasta, spinach, white beans, Parmesan -- and there's a noble chicken broth to hold them all together. This is Soup.

Italian sausage totally makes a soup, you don't even need to add other seasonings. My mom makes this thing in the fall that is basically her stewed tomatoes with hot italian sausage and then an extra round of onion, tomato and bell pepper chunks. Its so simple and yet perfect. I sub out a bottle of V-8 for the stewed tomatoes but its still pretty awesome.

I haven't gotten to reading the recipe, because I got distracted by the beautiful soup dish.

this is my standby winter chili alternative.
