It's Soup Month! We'll be bringing you all sorts of soups this month: vegan, vegetarian, carnivorous, grain-heavy, vegetable-thick, and broths that are clear and light. But the first one we wanted to spotlight is very timely: it comes from Gourmet's February edition, and it's a heck of a meal.
This is soup was inspired by the classic Vietnamese pho. It shows how soup can be a very hearty meal in its own right. This one includes meaty short ribs, beef shank, and a whole collection of spices. You can make it hotter, too, with a shot of hot sauce. We can hardly wait to try this one.

A couple of weeks ago I made a lentil beef soup that was delicious! I got the recipe from Giada De Laurentiis. Since I didn't have rosemary I added more fresh garlic and used a little less than a cup of lentils but added two small potato's instead. I also added a half cup red wine to the meat while browning. Lastly, it took over 3 hrs. because I wanted the meat extra tender. Here's the recipe if anyones interested:
