I love LOVE soba noodles. I have a recipe here that turns miso soup into an main course with gluten-free 1100% buckwheat soba noodles. I was inspired by Heidi Swanson's blog 101Cookbooks post. It's the perfect comfort / detox meal in minutes.

I like to reinvent my leftovers to give them a fresh feel. Recently we made soy braised kabocha squash, and we threw together the leftover braising liquids to make a filling soba noodle salad for lunch the next day!
