Over the past few years, bacon has been sprinkled into everything — from cupcakes to salads to cookies. To be honest, we got a little tired of the bacon overload. But we don't want to forget bacon's proper place; it still is one of the most delicious things you can eat. Personally, I like using just a hint of bacon at the beginning of a meal. That smoky saltiness wakes up the tastebuds for the meal to come. So many of my favorite appetizers call for just a smattering of bacon, and here are a few favorites — from bacon and goat cheese pops, to bacon-wrapped potato bites, to soup shooters garnished with just a tasty crumb or two.

Similar to the bacon goat cheese pops, I really enjoy Bacon Wrapped Dated Stuffed with Goat Cheese, fruity, cheesy, bacon-y, and delicious!
Just wrote about this on another post today so it is on my mind... Grilled Jalapenos stuffed with cream cheese and wrapped in bacon. We always throw these on the grill when smoking a brisket, and they are always gone before the meal is up... no matter how many "extra" I make.

My ex-bf and I would make jalapeno poppers stuffed with cream cheese and wrapped in bacon for summer bbq's. He cores the peppers, I stuff them, and we wrap w/bacon together. It's a long process (especially when you have more than 50), but definitely worth it in the end.
I make a very simple appetizer with just bacon and bread. You cut the crusts off a slice of bread and cut it in half. You slice the bacon in half (so that it fits the bread). You place the bacon on top of the bread and roll, forming a pinwheel. Then stick a toothpick in it to keep it together. Bake in a medium oven til both the bread and the bacon get crispy. Simple and so delicious.
My boyfriend and I made a modified version of the Goat Cheese Pops as an appetizer for a holiday dinner and they went over really, really well. We made the balls of goat cheese a little smaller than what's pictured, ditched the lollipop sticks, and just set the goat cheese on discs of sliced apple. Everyone raved over how good the flavor combination was!
