This is one of those "why didn't I think of that?" moments. The key to this process, as explained by Cook's Country, is to cook the sandwiches between two preheated baking sheets. Throw the baking sheets in the oven until hot, place the buttered and assembled sandwiches on one tray and cover with the second tray, rim side up. Bake until golden and gooey. No flipping, hovering or industrial size griddles required. Genius!

I only use a skillet when I'm making a sandwich for one. Otherwise, it's oven all the way. Growing up, my mom always made grilled cheese on a baking sheet, popped them in the oven, and halfway through just flipped them over. Might be a good alternative to the two baking sheets if you're like me and only have 1!
