What's happened to the potato is very sad. These days, your average grocery store carries two, maybe three, varieties of potatoes. Although there are hundreds of different varieties of potatoes around the world, many of which grow in the United States, only a few are brought to market. With the loss of such diversity, the earth weeps for sure.
Potatoes that are brought to market, if not organic, are likely sprayed with a chemical to suppress sprouting (just what I want, a potato I buy now and eat in July!) No thanks.
