Eggplant is in season right now, and at all the farmer's markets, we've been seeing such a wonderful variety of shapes and colors.
From tiny thumbnail-sized eggplants, to long, thin, pencil-like eggplants to green eggplants, they're all out there right now. Eggplant - what can't you do with it? It's great grilled, fried, baked, stewed, curried, stir-fried ... there are just so many things to do with eggplant, and it's delicious to boot! We hope you enjoy these photos.

I love, love, love, LOVE eggplant but unfortunately, my husband isn't as much of a fan. However, that still doesn't stop me from buying it and cooking it. My favorite ways are grilled and stacked with heirloom tomatoes and mozzarella or with roasted red peppers and feta; both then drizzled with basil oil over the top; ratatouille; and sauteed and mixed with pasta.
I once had a dream that I ate a five course meal and every course was eggplant. I woke up happy. True story.
Love Thai green eggplant with green curry-coconut milk. Might have to find some today!
A coworker of mine recently taught me a new eggplant recipe:
take an eggplant and put it in a pot of boiling water until it is squishy. add some toasted sesame oil and soy sauce (a bit of hot pepper is nice here too), mix it using forks (much as you'd shred pork for pulled pork) and let it sit a bit until all the flavors mix together. it goes well with rice.
