Seasonal Ingredient: Cantaloupe for Lunch

These savory, perfect-for-lunch dishes all use one surprising ingredient: cantaloupe. We're more accustomed to having the fruit on its own, but come to think of it, we do know some folks who like it with salt. And prosciutto-wrapped cantaloupe pieces are a popular appetizer. The lunch dishes below combine that salty and sweet to showcase the best of perfectly ripe, seasonal cantaloupe:

  • Salad of cantaloupe, prosciutto, and arugula with olive oil and balsamic vinegar. Here is another cantaloupe salad that uses bacon instead.
  • Soup and Sandwich: Another no-cook recipe pairs cantaloupe puree soup (salted and peppered) with mozzarella and prosciutto. We also love the sound of this simple BLC (bacon, lettuce, and cantaloupe) sandwich.
