Joy confesses in this post that she too is giving her sweet tooth a break, celebrating Valentine's instead with a green salad dotted with hot pink hearts. The trick? Shredded beets, a natural sweetheart for goat cheese at any time of year. She mixes the two together, then pats them into a flat disc and freezes until firm. After this the cheese can be cut into any shape you like, although of course the pink begs for tiny hearts. On a salad, like this green confection, or served with roasted beets for beet on beet action, these are a really terrific idea and one I'm swiping as soon as I can get a party planned.
