Go Beyond Potatoes! Make These Hasselback Root Vegetables

Earlier today we gave you some ideas for fresh takes on root vegetables. Here is one more little idea: Why not take the hasselback trend to more than just potatoes? Can you guess what the vegetable above is?

These pretty little petal-like vegetables are regular old rutabaga. Good on their own, or amazing as crispy layers with a little onion and garlic between their bits. It's such a pretty presentation and could be done with beets or carrots if you have the patience. Anything to get you through the last month or two until spring greens start to pop up!
