Yes, there are a few plugs for Diamond Crystal salt thrown in the dialogue, but there's also some really good information on the nature of salt and how we can better use it in our cooking.
One of our favorite clips is on the difference between seasoning salt and finishing salt, something that's always been a bit of a mystery to us. In his signature quirky style, Brown explains that seasoning salt is for drawing out flavors during cooking while finishing salt is for adding a burst of salty goodness and crunchy texture at the very end.
He also talks about why kosher salt is better than table salt for seasoning, perfecting your salt sprinkling technique, and when to use a finishing salt. Plus, Brown certainly never fails to entertain and we admit to laughing out loud at a few key moments!

Yay for Alton. I've sort of been obsessing about salt lately, because I've finally gotten around to reading "Salt" by Mark Kurlansky. I don't know how I made it this far in life not knowing the extent to which salt has influenced every single thing about everyone's history. The book is a little dry (ahem), but super interesting, and it's totally got me thinking about salt in a whole different light.
Barf.
I love Alton, but come on, too much propaganda for me.
I thought there would be more people shouting "sellout".
Sure, a lot of "celebrity chefs" or whatever have sold out. But at least AB seems to at least choose decent products instead of jumping at everything. And with this and the Welch's campaign, he at least combines it with some education.
Whether you like him or not, one has to admit that AB has been preaching about kosher salt with his flip top canister waaaaay before he teamed up with Blue Diamond. I honestly can't call him a "sellout" and believe me, I'm the first one to say it.
Grilled KFC chicken, anyone?
Another study came out today about too much salt in our diets. It reminded me of an episode of Good Eats where Alton nicely ranted that salt is not a bad thing. Can someone tell me what episode that was. Thanks.
