Salmon, Chicken, Double Pork: Club Sandwiches for Spring

Take a look at these mouthwatering club sandwiches from Daniel Boulud's Florida restaurant. A club sandwich isn't usually the first thing we think to make or order off a menu, but a well-made sandwich can be surprisingly fresh and delicious in spring. It's easy, with few ingredients, and yet so rewarding.

Each of these three sandwiches offer a more sophisticated take on the club sandwich formula: delicate white bread, toasted, with the crusts cut off, and a perfectly arranged strata of fillings. The Double Pork Club, for instance, calls for coleslaw (the recipe is included), ham and pork. The Chicken Provençal Club calls for harissa, tapenade, chicken, and arugula. Yum.
