Not that we have anything against gazpacho. We love it. But sometimes it's the only cold soup people consider when summer rolls around. We've rounded up some other warm-weather options, like cucumber, corn with crayfish, and one you can make in your blender with leftover vegetables from the fridge...
Often we think of chilled soups as an appetizer or a side dish to a more hearty meal. But add a half a sandwich or just a big slice of toast, and we think most of these could be a main course.

Last week we were in Prague, and had cold strawberry soup with cream cheese gnocchi. Lovely.
I have to say that one of biggest problems I have with gazpacho is that it can get a bit boring. The soup itself can be very easy (save time by using a quality vegetable juice as the base) which frees you up to concentrate on garnishes.

I think just about any blended soup can be nice served cold in the summer... I've done it with carrot-ginger, radish-leaf-lettuce, and leek-potato.

Haha, well I was featured on the site here for the gazpacho, but I have made cold corn soup, cold curried carrot soup, cold beet soup and a fruity chia pudding I turned into fruit soup! YUM!!!
