Ooh, I love cauliflower! We eat it all winter long. I like it best roasted, but I also love to add it to bisques because it adds such a velvety creaminess without cream.

I am on a huge cauliflower kick. I'm definitely going to have to try the casserole with chicken sausage. Last night I dumped a few chicken thighs, a few links of turkey italian sausage, and a bag of frozen caulflower in a casserole dish and threw it in the oven for a while. The cauliflower soaks up all the flavors (and, um, probably fat) and just melts in your mouth. So good!
I see lots of cauliflower in there! There's some in the foreground, a large floret in the back of the bowl, etc...
I could eat cauliflower all day long. I recently came up with a recipe for roasted cauliflower salad. After roasting the florets, you toss them with fluffy quinoa and a sweet-savory-spicy pesto of pinenuts, golden raisins, rosemary, and red pepper flakes. You can check out the recipe here:

I am not a big fan of cauliflower. However, my fresh market always has it and I always pick it up because I'm convinced there is a recipe out there that'll make me like it (my boyfriend loves the stuff so I want to use it more often than, you know, never). I got a food processor for Xmas, and one of the first things I made was Cauliflower "Rice." It was a definite hit.
The Tea & Sympathy cookbook has a recipe for cauliflower and cheese, which is incredibly delicious! I'm not a fan of cauliflower, but I love this stuff!
