I blame my recent fixation with breakfast sandwiches on the kale and sausage sandwich at the cafe a few miles from my house. It comes with a runny fried egg balanced on top of the braised kale, so when you cut the sandwich in half, the yolk oozes out and makes the whole sandwich a billion times tastier. I wouldn't mind starting every day with it — or any of these sandwiches, really.
Hot, savory breakfast sandwiches aren't just reserved for morning meals, of course. But smoked salmon, eggs, avocado or bacon make an especially welcome appearance on the breakfast plate, whether served open-faced on pumpernickel bread, or stuffed inside a buttermilk biscuit. I'm especially taken by the Fried Egg Sandwich with Kimchi and Bacon recipe below, which sounds like both the perfect way to start the day as well as the best midnight snack ever.

Mmm! I like toast with a fried egg, cheese, sauteed onion, and a thin slice of fresh tomato. Plus random spices or herbs. One day dried basil, the next day lemon pepper... Sometimes hot sauce.
There is something about a simple ham & fried egg sandwich (with plenty of ketup) that I can't get enough of! A really good sandwich is underrated.
My favorite egg sandwich: toast, 2 fried eggs, a slice or 2 of bacon, home made harissa, avocado or guacamole. That's what I'll have this morning, minus the harissa. Guess I need to make more!
I like a sweet and savory combo: 2 fried eggs with cheese, butter, and jam on homemade wheat bread. Yum! Had it this morning.

My favorite is to take one of those new-ish sandwich thins you find in the grocery store and add a scrambled egg, a slice of your favorite cheese (I prefer a good sharp cheddar) and either crisply cooked turkey bacon or a good sausage patty - I always add a little mayo or aoili (and a touch of ketchup if I'm using sausage!)....YUMMY! I cut the turkey bacon in half and cook 6 half-slices to extra crisp between paper towels in the microwave for 2:45, and cook the eggs in a sprayed mug in the microwave, too, which means I have breakfast in fewer than 5 minutes - do-able even on a work morning.
