I have slowly ripening tomatoes on my own vines, too, and I can hardly wait to create my first summer tomato salad. Lately, I've been enjoying a wonderful twist on the classic caprese from the Smitten Kitchen: Cubed, Hacked Caprese. Being more of a traditionalist than I realized, I couldn't bring myself to add the white beans, but I did serve the salad over mixed greens and cold, cooked capellini. Marvelous.
My family is from Slovenia and they eat tomato salad every day when tomatoes are in season. It's the best tomato salad I've had anywhere. Good, juicy tomatoes are key to a successful salad and pumpkin oil, which you can get in some health food stores. It's dark brown and has a rich, nutty flavor that pairs very well with tomatoes. Here's the "recipe":
Toss tomatoes with pepper, salt and a little bit of pumpkin oil. Add some sliced red onion if you like. Let it sit for a few minutes. The juice of the tomatoes will mix with the oil to create a delicious "dressing." Enjoy with some crusty bread, which you can dunk in the dressing and use to clean up the bowl. It's astonishing.
My fave is cubed tomatoes with lots of chopped fresh herbs (basil, parsley, whatever you've got), red onion, lemon juice and zaatar.

Love Yotam Ottolenghi's marinated mozzarella with tomato. Recipe for the marinade is here. Leave the mozzarella in for about 30 minutes and serve with lovely fresh tomatoes.
Oh yes me too...the Ottolenghi marinated mozzarella with tomato is a favorite of mine...also this Tomato Walnut Salad...
