If you didn't eat yourself silly over the holidays you're definitely in the minority and also extremely lucky. I definitely gained a few unwanted pounds over the past month and now I'm looking to eat a little lighter. Salads are just the perfect thing.
But just because it's a salad doesn't mean it has to be boring and prepackaged. Salads are meant to be dressed up and made to be sophisticated. Salad doesn't have to necessarily mean there are leafy greens involved. The French Cauliflower Salad from Pham Fatale sounds absolutely delicious.
If you are looking for leafy greens jazzed up a bit — the simple Weekend Glow Kale Salad from Oh She Glows is the perfect option. Here are a few more:
• Roasted Acorn Squash With Fresh Farro and Feta, A Couple Cooks
• Citrus and Mint Salad, The Curvy Carrot
• Green Bean Salad With Lemon Garlic and Chili, Marcus Samuelsson
• French Cauliflower Salad, Pham Fatale

Goodness, these are pretty! They all look delicious. That article about the kale salad has definitely inspired me to try kale again.
Ooh, nice! I love me a sophisticated salad when I'm dining out, but despite my culinary adventurousness in most other areas, I only *make* a sophisticated salad, say, twice a year. Does this mean I'm not grown up? Meh, probably.
It's delightful food porn, though.

I made the most wonderful fruit salad this weekend: kiwi, mango, pomegranate seeds, canned lychees, with a lime-honey-oil-poppyseed dressing. Absolutely gorgeous and SO delicious.
I start the year with veggies too, usually to detox from all the drinking and overeating. I'm posting this week a vegetarian menu in my blog (mint and pea soup, stuffed poblanos with goat cheese and black beans and vegetarian ceviche. Hope you can check it out
I made Joy the Baker's Spinach Feta Blood Orange Salad last night to great effect, with a spinach-arugula mix and some Meyer lemon olive oil. I felt wonderful afterward. I love nuts and seeds on salads, too.
Soirees & Such, I will definitely be checking out your vegetarian menu!
