Strawberries are just coming into season, and what a treat they are! Juicy, dripping with scarlet juice, and just the right size for snacking. I love a big bowl of strawberries for dessert; they don't need anything more than a splash of cream to be a luxurious treat. But when I feel the urge to make something just slightly more involved, I turn to one of these recipes. From a delicious icebox cake to the perfect strawberry shake, and from simple strawberry trifles to strawberry milk, there's something here for everyone.

How do you not have strawberry shortcake on here?! It's probably my all time favorite dessert. I especially enjoy it with a good scone cut in half with fresh strawberries and whipped cream. simple & classic.
Strawberry-rhubarb crumble is my absolute favorite dessert of all time! I use Deb's recipe from Smitten Kitchen. I just made it for the first time this week, after buying 2 quarts of berries from my favorite farmer at the market and seeing rhubarb at the local coop. Did nobody mention them being best with Gruyere double cream and a meringue gently crushed over it?? Hmm, I'm off to the shops!
Even better variation on #1 - mix the strawberries and sour cream (or full-fat greek yogurt, which I usually prefer) together in a ramekin, sprinkle brown sugar over the top, pop under the broiler for a few minutes just until the sugar is caramelized and creme brulee-ish. Don't use low fat sour cream or yogurt, or it will separate. My favorite go-to summer dessert with almost any fruit.
When strawberries are in season I love nothing more than a classic victoria sandwich. Simple but festive and just plain delicious.
Oh yes, strawberries, sour cream and brown sugar... one of the most delicious evils ever invented. :-D
