Earlier this week we tipped you off to what Slate calls the "ideal ingredient to complement watermelon" — feta. It's true: the salty creaminess of good feta turns watermelon from a simple treat into something dressed for a dinner party. It's still very simple — here's how I like to make my own watermelon and feta salad.
This salad is ultra simple. I cut up about half a small watermelon (see the easiest way to do that here) and toss it with a few things to bring out its flavor. A dash of rice vinegar balances the sweetness and makes the salad even juicier.
This salad is best made right before serving. If it sits in the fridge overnight I find it can get a little slimy and too juicy. Made just a few minutes before serving, the watermelon is crisp and fresh, and the cheese creamy and bright. The mint isn't just a garnish; its taste penetrates the watermelon quickly.
To me, this is up there with caprese salad as one of the ultimate expressions of summer.
Watermelon Salad with Feta & Mint
serves 46 cups watermelon cubes, from about 1/4 of a large watermelon
1 tablespoon rice vinegar
3 ounces feta cheese, drained and crumbled
1 loosely packed cup fresh mint leaves
Freshly ground black pepper
Flaky sea salt
Pour off any juice that has gathered around the watermelon. Toss gently with the rice vinegar. Toss with the feta cheese crumbles, just until the watermelon begins to look lightly coated.
Chop the mint leaves very, very finely, into tiny ribbons. Toss with the watermelon and spread in a serving bowl. Garnish generously with black pepper. Taste. If desired, add a sprinkle of flaky sea salt. Serve immediately.

ricotta also goes well with watermelon.... so does pickled blueberries (mix equal portion of balsamic vinegar & sugar and let blueberries soak for a day). Oh my. Flavors explode in the mouth!! I love summer fruits!!!

I make this with Red Onion and a dressing of red wine vinaigrette. It is DELICIOUS.

I've tried this but I just don't feel the love. Maybe my feta wasn't good enough. I won't say what the combo tastes like to me. I do love watermelon with mint, just not with the feta.
Another variation I've seen of this is with a balsamic vinegar drizzle, feta, and basil or cilantro.
Never knew that this was so good until I had it the first time at the Epcot Food and Wine Festival one year. Now there's a food truck in our area that has this on their menu! Yummy!

A variation on this has been one of my main summer dishes for several years now...ever since Trader Joes was giving it out as a free sample and I became obsessed. The way I learned to make it was watermelon, gorgonzola, fresh mint, sea salt and a balsamic reduction. Of course it's best if you reduce the balsamic yourself, but I've been known to just use a bottled glaze or even plain balsamic.
Seriously, I planted mint just for this purpose. I eat it several times a week.
You can also make it as a soup. I'm not too fond of cold soups, but this one was just superb !

This recipe is missing the red onions soaked 30 mins in lime juice (omit rice wine), a drizzle of olive oil and sliced black olives. Trust me on this one.
My SO is obsessed with honeydew and feta. I'm not a big honeydew fan, so the idea kinda grosses me out, but I have no problem with watermelon with feta for some reason. I hadn't read the Slate article, but I assumed the answer was going to be "salt" - so, not too far off.
