Roasted, braised, puréed ... we love cauliflower in any form. Here's a preparation we haven't yet tried, though: stuffed!
In a recent issue of Vegetarian Times, Madhu Gadia – author of The Indian Vegan Kitchen and New Indian Home Cooking – shares a recipe for stuffed cauliflower that we can't wait to try.
The entire head of cauliflower is steamed, then stuffed with a savory blend of onion, tomato sauce, ginger, garlic, and spices like cumin, coriander, and garam masala, and then baked in the oven. Slicing it makes for a pretty presentation. The recipe is vegan, healthful, and sounds delicious!

i just had this on Sunday night at Turmeric in Sunnyvale and it was incredible....and I hate cauliflower.
But - it isn't actually stuffed, is it? It's really coated with the onion mixture and that's a totally different treatment from stuffing. Although, I must confess, I think it might be a little challenging to actually stuff a cauliflower.
There's a version of this in Yamuna Devi's Lord Krishna's Cuisine. She says it's Rajasthani in origin.

I suppose it's stuffed in the sense that the stuffing is jammed into the floret interstices and on the outside. Or is it that the cauliflower is stuffed inside the coating? Anyway, it sounds really good!
