Ever since we wrote about freezing bread remainders, we've been on a bread pudding kick. A warm, sweet dish of sweet potato or apple walnut bread pudding is so satisfying this time of year (or any time of year, really!). Bread pudding doesn't have to be limited to dessert, though. Made with savory ingredients, this comfort food can be served as an entrée or side dish.

I love bread pudding for dinner/breakfast because it's thrifty and lets you use up leftovers! I usually use a tiny bit of very tasty meat--bacon, proscuitto, sausage, whatever needs used--greens like chard or kale (precooked), a really tasty cheese like gruyere or sharp cheddar, herbs, and tomatoes if I have them.
oh, I am very hungry for bread pudding now.....
In Newfoundland where my husband is from they have a savory bread pudding for holidays and their jiggs dinners. I wasnt too fussy about it because I'd only known sweet bread puddings but i may have to give some the above-mentioned ones a try :)
Absolutely--all the time! Try one with corn, green chiles, and cheese (cheddar, monterrey jack, or farmer's queso), and Mexican dried or fresh herbs (cilantro, epazote, oregano).
Blueberry and Peach Bread Pudding - super good for the summer and you can sub in cherries or whatever fruit is in season.
