The Sugar Snap Pea Salad initially caught my attention because I adore each of the components on their own but had never thought to bring them all together in one bowl. And in the summer it's nice to have a few interesting salad recipes that you really love for easy entertaining. This salad fits the bill: it's a summer stunner with bright pink radishes, vibrant green peas and stark white feta all nestled together in a simple lemon vinaigrette.
This salad isn't just a looker; all kinds of salad eaters will fall in love with the balanced flavors: the sweetness from the sugar peas balances out the slightly bitter crunch from the radish and the soft saltiness from the feta cheese. It all works.
One tip: I did find this salad to be best the day it's made. Once it's dressed it doesn't hold up particularly well.
