The recipe is taken from Essentials of Baking: Recipes and Techniques for Successful Home Baking and was very easy to make. The polenta adds a corny sweetness to the cake, and the brandy-soaked sultanas give some moisture to the corn-based cake. The topping of dried lavender flowers adds a herby, earthy bite to the cake.
