
The very popular avocado thread last week got us dreaming about our favorite avocado sandwich at our favorite beach cafe. The Mozzacado is an odd yet sublime mix of avocado spread with pesto on a classic tomato-mozzarella sandwich. We whipped one up for lunch yesterday, substituting fresh, spicy basil leaves for the more refined pesto.
We offer the formula below - more by way of inspiration than as an actual recipe. Try it sometime - it's a delicious summer lunch.
Mozzacado Sandwich
serves 2
4 slices of good thick bread, slightly toasted
1 avocado
1 small vine-ripened tomato
4 thick slices whole milk mozzarella
Handful of fresh basil leaves
Chunky sea salt and fresh black pepper
While the bread is toasting, smash the pitted avocado with a little salt and pepper, and spread it on the warm bread. Layer the cheese with the basil and tomato. Make two sandwiches and eat!

I love how the directions seem to imply that the maker gets to eat both sandwiches! I know I'd have a hard time sharing!

I think I'll run with this one, with one modification-
Instead of toasting the bread, assemble the sandwich, brush on a little olive oil, and put it in the panini press. Get that Mozzarella all nice and gooey..
Oh, this sounds good! What a mouthwatering photo. I enjoyed today's 'look back at last year' post - especially because it brought me to this sandwich! I, too, love to see what was going on around the farm and in the garden at the same time during previous years.
