Living in California, we're always surrounded by mangoes. We love eating them plain and sucking on the pits, or we like to sprinkle them with a little chili pepper Latin American-style. Packed with vitamins and fiber, mangoes are a nutritional powerhouse and absolutely delicious.We came across this recipe on Chowhound for Marinated Mango(click through for recipe) and all the ingredients were in season, so we happily purchased everything at the Alemany Farmer's Market and set about making this. It was very quick and easy to make, and required a minimal amount of recipes. The fresh, tender mango pairs well with the crunchy jicama and the spiciness of cayenne and fresh mint mingled in makes excellent flavors.
The salad kept well and was a staple in our lunch box all last week. However, the recipe makes a lot, and after a few days, we got a little sick of the leftovers (we're a household of two) so next time, we'll halve the recipe.
