
Dare we call this a recipe? Really, it is more of a snacky reminder, in list-form, of the deliciousness of its ingredients - who doesn't love a black bean and Queso Fresco?
Black Bean Soft Taco
serves 1, as a snack or a side
1 corn tortilla
1/4 cup cooked black beans
dash ground cumin
dash of salt and freshly ground pepper
2 tablepsoons crumbled Queso Fresco (or Feta cheese)
A few pinches chopped cilantro
In a skillet over a medium flame, warm the tortilla for a few second. Top with beans, a dash of cumin, salt and pepper. Cover and let warm about a minute. Top with cheese and cilantro.

OT, but do you happen to know how much fresh tumeric equals 2 tsp of dry tumeric?

I'm guessing 1 teaspoon of turmeric powder is 3/4" of fresh turmeric root. Similar to ginger.

That looks so good. I do loves me some beans.
My way /suggestions:
1)beans will have been cooked with onion and garlic cloves & a bay leaf.
2)heat olive oil add chopped onion in a pan and fry until golden; this will flavor the oil. You may leave the onions in; add the cooked beans with a little liquid, fry while mashing beans slightly. Alternatively, blend or process the cooked beans then add to hot oil & onion.
3) can be eaten in a taco as above or as a side dish etc.
4) Enjoy!
my favorite veggie burrito dinner is black bean and sweet potato. Just boil and mash the sweet potato, and put it in a tortilla with black beans, cheese, and salsa.
