Vegan Snack Recipe: The Avodilla

With buttery avocado wrapped between light and bubbly lavash layers, and maple syrup and salt giving a hint of sweet-salty flavor, this healthy riff on a quesadilla will help keep you satisfied until your next meal.

The secret to this recipe is the combination of the savory, rustic flavor from the lavash bread, combined with the buttery avocado and accented with a pop of sweet. The sweetener even adds a slightly caramelized texture to the lavash as it sizzles on the skillet. Avocados are rich in healthy fats and a delicious addition to any meal.

For this recipe, you can add the avocado in slices or mash it. Lavash wraps are such a great pantry item for your kitchen. I love them for easy hummus spiral wraps as well!

Serves 1

Ingredients

  • 1/2 teaspoon

    virgin coconut oil

  • 1

    medium lavash wrap

  • 1/2

    medium avocado, sliced

  • 1 teaspoon

    maple syrup or agave syrup

  • Pinch sea salt

Instructions

  1. Melt the coconut oil in a skillet over high heat. Place the lavash wrap in the skillet and let it soften and warm for a minute. Next, layer the sliced avocado down the middle of the warm lavash and fold over into third to seal in the avocado.

  2. Drizzle the sweetener over the lavash as it toasts on the hot pan. Flip once. The lavash is ready when the edges start to brown and bubble.

  3. Add a pinch of sea salt over top and slice to serve.
