Straw Mat from The ...

OMG. Rainbow cookies! I was born and raised in Brooklyn, and one of of my most cherished childhood memories is visiting the Italian bakeries with my mother and grandmother. They would always get me the rainbow cookies because they were my favorite. I can still taste the almond-flavored cake and apricot jam. Yum!
@mmelugin - I grew up in Queens and I have the same kinds of memories! Rainbow cookies (which are much more brightly colored in NYC than in the picture above) are still one of my absolute favorite treats!
@merm & mmelugin -- right there with you guys!! They were always my favorite cookie at the Italian bakeries and there was one near my subway stop so I could pop in for a treat after school. And I don't know why the ones pictured are so tastefully colored! They should be garishly pink, yellow, and green!
Like this.
But I also just saw that the cookies above were colored that way to coordinate for a friend's wedding. Lucky friend.
Deb from smitten kitchen made rainbow cookies that are a much better color than those muted ones! http://smittenkitchen.com/2008/12/seven-layer-cookies/
@arielg - LOL. Those are the ones from smitten kitchen. The blog author uses Deb's recipe (and says so), as do I, but made the pictured cookies in a purple/pink tint to coordinate with her friend's wedding colors. Terrific idia.
