Sauteed onions, add a heaping T. red curry paste. Cook another minute. Add a can of tomatoes (doesn't matter what kind), and a splash of water. Cook 5 minutes. Blend with immersion blender. Swirl in coconut milk if you're feeling fancy. Ta da!

hominy, gr onion and chicken stock soup.. works for me in a pinch. I usually just do a quick saute in pot of gr onions and garlic and whatever savory herbs like thyme rosemary etc. season to taste or leave out the gr onions as well.. and then just add canned hominy with stock. You can add left over chicken as well.
