Between planning your Thanksgiving meal, grocery shopping, brining, and making dishes ahead of time, actual eating—as in dinner, tonight—gets lost in the shuffle. At least it does for us (we had sushi delivered last night). So, if you want something easy that won't take too much time away from your Thanksgiving preparations, we have some ideas...
Thinking about all the turkey, stuffing, and pie we'll be having in a few days makes us crave healthy food right now. We want simple vegetables, maybe some seafood, possibly something Asian... And we'd like it to be fast and not create too many dirty dishes.

we will have chili tonight & chili mac tomorrow with the leftovers. wont be any time to cook dinner tomorrow.
we had the Tomato and White Bean Panade last week. Quite good! A simple but hardy meal.
We are having minestrone wed night. A light(ish) soup before the grand meal.
I did a veggie/tofu stir fry last night, but I have to admit I'm planning on frozen pizza tonight while I make cranberry relish.
I always crave asian food after a big holiday meal.
For canadian thanksgiving, we had celebrated twice, so for a few days after, we mixed our turkey leftovers into asian stirfry and soup.
It was a good way of having something totally different, but without wasting our gigantic turkey.
last night i had sauteed swiss chard and a grill cheese sandwich with olive tapenade.
after doing food shopping after work tonight, i'll likely just make a quick rice noodle/mushroom for dinner while i make applesauce and cranberry relish.
Salad and sammies last night and something equally as light and easy tonight and tomorrow. I have 2 pies and the no-knead bread to make this evening, tomorrow is the sugar and spice pumpkin pie and dinner rolls to prep.
