For better or worse, rice cakes have become one of my gluten-free travel staples. They're easy to find, are surprisingly sturdy, and make a decent alternative to sandwich bread when staying with non-GF friends and family. Yet rice cakes are boring and not especially nutritious (possibly even bad for you). I plan to replace them with this Super Power Chia Bread from Oh She Glows.
This vegan and gluten-free Super Power Chia Bread is packed with protein and fiber from chia seeds, sunflower and pumpkin seeds, oats, and buckwheat, plus savory spices. Angela developed the recipe specifically for traveling and reports that the bread is nice and sturdy compared to crackers.
Making these won't cut into your packing time, either. They take just 5 minutes to prep and then 25 minutes in the oven. So long, rice cakes!
