I make a citrus ceviche with crab, limes, oranges and lemons that everyone seems to love! I have the recipe on my blog. All the chopping and squeezing does take a while, but the result is perfect for hot days when cooking is simply NOT AN OPTION.

@Country Girl: thanks so much for posting your recipe, looks AMAZING! I live in a place where it is nearly impossible to get fresh (i.e. not frozen) seafood, and imitation crab is the perfect solution. YUM!
I'm eating ceviche for dinner as we speak! Snapper, lemon/lime juice, jalapeno, scallions, red bell pepper and avocado. With a margarita on the side.
