I'm a REALLY big fan of Tartelette's Bacon & Green Onion Tart/Quiche found over at Design*Sponge. It is sooo tasty.
I like to make a really easy spinach quiche that has a press-in crust. This is easier and much faster than making and rolling out pastry. So then I can serve quiche on a weeknight, easily.
I make a goat cheese, beef bacon and kale quiche that is the household favorite. Love it!

quiche would be one of my (semi)quick weeknight "casseroles" - Grab a pie crust from the freezer (my recipe makes 3 - so the left over ones are reserved for quiche or quick pie later) It's great for using up left over odds and ends, onion? spinach? frozen "crab"? ham? chedder? swiss? goat cheese? go crazy - chop/dice/saute down, throw in shell, pour over the eggs toss in oven. Go move laundry, clean kitchen etc etc etc 45 min later dinner! what's better than that?
My fave quiche is the one my boyfriend makes: Quiche Alsacienne - sooooo yummy!
I love making quiche, because other than the crust, it's really simple! I only ever make leek and asparagus quiche, because I love both asparagus and leeks! I've served this to guests many times and it's always a favorite!

I actually have a quiche in the oven right now. These days I'm making Pain Quotidien's Quiche Lorraine recipe from Smitten Kitchen. It's 1/2 cup heavy cream and 1 cup sour cream. I'd never thought to put sour cream in, it's excellent! It's much lighter and more delicate than all heavy cream.
Asparagus. Hands down.
Pizza style! - dump a nice pile of tomato sauce, onion, black olives and shredded mozzarella in the center of the quiche and cover with egg mixture (I prefer actual spray can "whipped" heavy cream blended with non fat milk)
