Prep This Coconut French Toast Tonight for Brunch Tomorrow

Hosting guests for the weekend always presents a problem: You want to spend as much time as possible with them, but you also want to feed them delicious meals.

That's why I love this French toast recipe. You soak the bread in a coconut milk custard overnight, and then all you have to do the next morning is throw it into the oven to bake. A delicious brunch without having to spend hours in the kitchen? That's a win-win.

On Friday evening, before your guests arrive (or after they've gone to bed), layer some brioche in a baking pan and pour over the custard. Cover the baking dish with plastic wrap and set it in the fridge, and then go to sleep!

When you wake up the next morning, all you have to do is sprinkle on some coconut flakes and bake the whole thing for 30 minutes. While breakfast is doing its thing in the oven, you get to catch up over a cup of coffee with your guests while the heavenly scent of French toast fills the air.
