As the cooler temperatures of autumn creep in, and the leaves turn bright colors, we also start thinking of cozy, heartier meals, and potatoes are at the top of the list of ingredients we turn to. This time of year we are beginning to think of mashed potatoes, and twice-baked potatoes, and delicious potato tacos. Made the potato taco last night - YUM!
The bacon wrapped potato bites were fabulous for dinner last night. Made some scrambeled eggs on the side for a different kind of breakfast-for-dinner
We just bought a couple of pounds of potatoes on impulse the other day, but now I don't think we bought enough! That kale and potato puree looks wonderful. I never got around to planting any potatoes this year, but I do have some nice volunteer kale in my kitchen garden. I've been feeding it to the chickens because it's so nutritious and they love it (and I've been busy working my way through the greenhouse full of Swiss chard), but I think it's time they shared some with me. ;)
