Everyone knows about birthday cake for breakfast, and we used to beg our mom to let us chase it with morning ice cream too. But what if a frozen treat at breakfast wasn't an indulgence, but instead a healthy snack to grab and go? Meet the breakfast popsicle.
I spotted these breakfast popsicles and was struck not only by their cleverness, but also their practicality. We're always looking for portable breakfasts for busy mornings but a popsicle had never crossed my mind.
These are vegan, made with almond milk, banana, blueberries, and granola. I'm sure you could make them with plain or vanilla yogurt, too, and add any sort of fresh fruit. Can't you imagine eating these in the car, or on the train? Easy and mess-free, and so refreshing in the summertime.
